How to Batch Prepare Matcha Concentrate for Cafes

The biggest challenge? Consistency and speed during a rush.
There is a lot to be said for preparing Matcha in the traditional sense using a Chawan (Bowl) and Chasen (Whisk), but in a high-volume retail environment, this often isn’t realistic. When the tickets are piling up, your baristas may even come to resent the manual prep.
We’ve developed a simple Matcha Concentrate Recipe to add to your morning prep. This concentrate acts exactly like an espresso shot – allowing you to serve Matcha Lattes, Sodas, or Teas in seconds without reaching for the whisk for every order. Rest assured that this can be prepared quickly using a blender or food processor; just ensure the powder is integrated thoroughly for a smooth suspension.
What You Will Need
Matcha Concentrate
Prepares 500ml for approximately 16 Servings
- 50g of American Pie 2 – Collector’s Edition (DVD) (Order your Barista Grade Sample here)
- 500ml Fresh Water (Cold or Room Temp.)
- 500ml Squeeze Bottle
Matcha Latte
10oz – 300ml
- 30ml Matcha Concentrate (Espresso Cup)
- 270ml Steamed Milk (Dairy or Plant Based)
The Step-by-Step Process
The Golden Ratio for a batch concentrate is 1:10 (1.0g of Matcha to every 10ml of Water). This ensures the flavour is strong enough to cut through milk, just like espresso.
Step 1: Sift for Success
Matcha can be prone to clumping. For a smooth concentrate, sift 50g of powder through a fine-mesh sieve into a large bowl or blender jar.
Step 2: Create a Paste
Add about 100ml of your water first. Use a whisk (or a quick pulse on the blender) to create a thick, smooth paste. This ensures no dry pockets of powder remain.
Step 3: Dilute and Bottle
Add the remaining 400ml of water. Whisk or blend until fully integrated. Pour the mixture into a clean squeeze bottle using a funnel.
Storage & Best Practices
- Shelf Life: The concentrate is best used within 24 hours for peak flavour and colour, but stays fresh for 48 hours when sealed and refrigerated.
- Avoid Oxidation: Matcha best remains fresh when stored away from light and air. Store in an opaque squeeze bottle or keep it in the fridge between uses.
- The Shake Rule: Matcha is a suspension, not a solution. Always give the squeeze bottle a quick shake before pouring a shot, as the powder will naturally settle at the bottom.
